This is another example of a phrase that is spoken, possibly in an answer to a question. It is just three words, with no verb.

The pronoun "you" is used explicitly as the subject of the sentence. This information is usually part of the verb, but he there is no verb, but the verb alone would have been used if the goal wasn't to put the emphasis on "you" as we might say "you yourselves." It is plural.

There is no verb "are" here. However, the two word in the form of a subject might be taken to assume an "are".

The word translated as "witness" means "witness" and it is the source of our word "martyr".

"Of these" is a demonstrative pronoun that means "this", "here", "the nearer," and "the familiar." Its form gives it the meaning of "of". The "things" is added because of the context.
